Appalam/Papad kootu

 


This is one of the famous South Indian recipe.  You can easily prepare this recipe with minimal ingredients.  This is the perfect go with Rasam and tangy South Indian gravies.

Ingredients:

  1. Gram dal - 100 gms
  2. Onion - 2 nos
  3. Tomato - 2 nos
  4. Garlic - 7 cloves
  5.  Appalam - 7- 10 nos
  6. Green chilies - 3 nos
  7. Turmeric powder - 1 TSP
  8. Asafoetida - 1/2 TSP
  9. Mustard - 1/2 TSP
  10. Cumin seeds - 1/2 TSP
  11. Urad dal - 1/2 TSP
  12. Dry red chilies - 3 nos
  13. Curry leaves - 2 spring
  14. Oil - 3 TBSP
  15. Water
  16. Salt

Cooking Instructions:

  1. Soak the gram dal for 30 minutes. Then Add the soaked gram dal, onion, tomato, green chili, unpeeled garlic, turmeric powder, salt and 5 drops of oil in a pressure pan.


  2. Allow it to cook for 4 whistles. In the mean time fry the papads and keep aside. Open the pressure pan and ensure that dal cooked well so that it will gives you good taste. Also make sure that it should not over cooked. It should be soft not mashed. 

  3. Keep the cooked dal in a same pressure pan and switch on the flame. Break the fried appalam and add the applam in the pressure pan. Allow it to cook till the appalam gets the soft texture. It may usually takes 3 - 4 minutes.

  4. In the mean time take a pan, add oil, mustard, urad dal, spring leaves, asafoetida, dry red chilies. Let it splutter.

  5. Now add the cooked dal and fryums in a pan, Add some chopped coriander leaves and switch off the flame. Now the delicious appalam kootu is ready to serve.
